Soybeans, native to East Asia, are legumes which contain high levles of protein, as well as other nutrients including vitamin K, B vitamins, copper, magnesium, zinc, selenium, and calcium. Soybeans have been said to help prevent osteoporosis, boost metabolic activity, improve bone health and help lower cholesterol levels. However, there is evidence of the phytoestrogens in soy displacing naturally-occurring hormone levels. Soy is easier to digest when fermented, such as miso or tempeh.
